Apple oat bran muffins
Makes 12
60g All Bran cereal (Bran flakes if irritable bowel)
225ml skimmed milk
170ml 100% stone ground flour
50g fructose (Fruisana)
2tsp baking powder
½ tsp baking soda
¼ tsp salt
2tsp cinnamon
240g oat bran
2 large apples, peeled cut into small cubes
1 omega-3 rich egg, lightly beaten
2 tsp olive or canola oil
115ml unsweetened applesauce
- Mix the All Bran and skimmed milk in a bowl and let stand for a few minutes.
- In a large bowl, mix the flour, Fruisana, baking powder, baking soda, salt, cinnamon and apple cubes.
- In a separate bowl combine egg, vegetable oil and applesauce.
- Combine this with the All Bran and milk mixture, and add to the dry ingredients.
- Spoon the mixture into an oil-sprayed 12-muffin tray.
- Bake at 175 degrees C/ 350 degrees F/ gas mark 4 for 20 minutes, or until lightly browned.
