Apple oat bran muffins

Makes 12

60g All Bran cereal (Bran flakes if irritable bowel)
225ml skimmed milk
170ml 100% stone ground flour
50g fructose (Fruisana)
2tsp baking powder
½ tsp baking soda
¼ tsp salt
2tsp cinnamon
240g oat bran
2 large apples, peeled cut into small cubes
1 omega-3 rich egg, lightly beaten
2 tsp olive or canola oil
115ml unsweetened applesauce


  1. Mix the All Bran and skimmed milk in a bowl and let stand for a few minutes.
  2. In a large bowl, mix the flour, Fruisana, baking powder, baking soda, salt, cinnamon and apple cubes.
  3. In a separate bowl combine egg, vegetable oil and applesauce.
  4. Combine this with the All Bran and milk mixture, and add to the dry ingredients.
  5. Spoon the mixture into an oil-sprayed 12-muffin tray.
  6. Bake at 175 degrees C/ 350 degrees F/ gas mark 4 for 20 minutes, or until lightly browned.
