Chilli con carne
Serves 6
2 x med tins of baked beans in tomato sauce
1 bag quorn mince
2 medium onions, chopped
2 cloves garlic crushed
2 red peppers, chopped
1 green pepper
12.5ml coriander
5ml cinnamon
12.5ml cumin seed
2ml mixed herbs
25ml chilli powder
2ml origanum
5ml paprika
5ml chicken seasoning
1 tin chopped tomatoes
65g tin of tomato paste
salt and freshly ground black pepper to taste
2 tsp olive oil or olive oil spray
- Fry the onion and garlic with olive oil or fat-free oil spray till brown.
- Add the quorn mince and season with paprika and chicken seasoning.
- Add the peppers, baked beans and the rest of the spices, herbs and seasoning.
- Stir in the chopped tomatoes and tomato paste and simmer for 20 minutes. Stir occasionally.
Tips
- Since there already is a carbohydrate in this meal, why not serve the chilli con carne in large pre-baked marrow halves?
- Garnish with fresh chopped parsley and a sprinkle of chilli powder.
